Laura Lillian Escobar
Heaven became a little brighter and a lot funnier when Laura Lillian Escobar arrived on June 1, 2025.
She will be crafting, gardening, baking, telling stories, and cracking jokes nonstop, but mostly she will be watching over her beloved family.
Laura entered the world on May 20, 1961, in Corpus Christi, the daughter of Manuel and Susan Escamilla. She was raised in Corpus Christi and graduated in 1979 from Mary Carroll High School, where she was a proud member of the Tigerette dance team. In high school, she met the love of her life, Rory Escobar, and they married on November 14, 1981. They set about raising a family and supporting their children’s school communities. Laura owned ERMC/All Temps Personnel Services, where she loved her employees like family.
Laura could tell a story and throw a party like no other; family and friends were the center of her life. Her laughter and good humor were infectious, and she loved creating things. Whether it was beautiful cookies, baked goods, or crafts and sewing, she loved designing, inventing, and producing things for family and friends. Her cooking experiments were ahead of their time, and she loved to say she invented the sausage wrap. She also loved to camp, and she and Rory criss-crossed Texas in their RV.
Her greatest joy in life were her grandchildren, who love their Mimi boundlessly. She took special pleasure in supporting their activities and sports.
Laura was preceded in death by her father, Manuel Escamilla, and grandparents Calletano Ramirez, Guadalupe Ramirez, and Lucinda Budd Martinez.
She is survived by her husband of 47 years Rory Escobar of Corpus Christi; daughters Kristen Gillespie (Drew) of Austin; Allison Ita (Marc) of Corpus Christi; and Megan Houck (Tom) of Corpus Christi; her grandchildren Aiden and Camden Ita, Madelyn Martin, Holland Houck, and Beckham and Lillian Gillespie; her mother Susan Escamilla of Corpus Christi; and her brothers Victor Escamilla (Ruth) of Fischer, Patrick Escamilla (Jill) of Austin, Mark Escamilla (Jodi) of Corpus Christi, and Roman Escamilla (Kelly) of Leander; as well as numerous nieces and nephews.
